Weekend Fancy Foods (3) : Mussels and Chips

2kg of mussels from Billingsgate again (for just £5)! Perfect for a weekend lunch~


Recipe

Ingredients (4 servings)

  • 2kg fresh mussels

  • 1 chopped shallot

  • 1.5 cups white wine

  • 1-2 chopped garlic cloves

  • lots of parsley

  • Frozen chips


Method

  1. Prepare mussels (clean, scrub, remove 'beards',check for bad mussels etc).

  2. Heat up a pan/wok, drizzle olive oil.

  3. Add shallots and garlic, stir fry until fragrant.

  4. Add mussels, white wine, and some parsley. Cover lid and let it simmer for 10 minutes (until all mussels are open).

  5. Cook frozen chips in the oven per packet instructions (usually takes 10-15 minutes).

  6. Remove pan/wok from heat. Garnish mussel dish with fresh chopped parsley. Serve with chips!
