Weekend Fancy Foods (2) : Razor Clams

Fresh from the market razor clam recipe with simple ingredients: white wine, chillis, garlic, parsley!


Recipe

Ingredients (for 4 servings)

  • 1kg of razor clams

  • 4-5 cloves of minced garlic

  • 4-6 dried chilies

  • Lots of chopped parsley

  • 1-2 bird eye chilies (for the spicy kick!)

  • 1.5 cups of white wine

Method

  1. Soak razor clams under salted cold water for 30 minutes. Clean outer shell of razor clams.

  2. Heat up pan/wok and drizzle with olive oil. Stir-fry chillies and garlic until fragrant.

  3. Add razor clams. Add white wine and parsley.

  4. Cover pan/wok with lid and let it simmer for 10 minutes. Add salt according to taste.

  5. Remove heat. Garnish dish with chopped parsley.
