Stir-Fry Series (1) : Okra

Eager to cook a new vegetable not commonly found in supermarkets? Stir-fry okra is perfect - it is salty, spicy, crunchy and just a little slimy. You can get them in a big pack for £3-4 from Chinatown or Asian supermarkets.


Recipe

Ingredients

  • 15 okras

  • 2 cloves of garlic

  • 2-3 red chilies

  • 5-7 dried shrimps (optional, but a must-bring ingredient from home every time I travel back to London)

  • 1 teaspoon of light-soy sauce

  • A pinch Salt

  • Some water

Instructions

  1. Rinse okras under water. Remove top end of each okra. Cut into diagonal slices. Set aside

  2. Mince garlic and red chilies. Quickly rinse dried shrimps and mince them coarsely. Set all ingredients aside.

  3. Heat up pan and add oil. Put in dried shrimps and fry under golden brown. Remove from pan. Add more oil, add garlic and fry until fragrant. Add okras and red chiles. Season with soy sauce and salt. Add some water into the pan to prevent the vegetables burning.

  4. Stir-fry for 2-3 minutes. Add back cooked dried shrimps. Remove from pan.

  5. Serve with a hot bowl of rice.
