Stir-fry Series (4) : Fried Rice

Lacking ideas of what dish to make? The one-pan fried rice can never go wrong! You can literally add any ingredients to it, with a dash of soy sauce and sesame oil, a meal is done.

Recipe

Ingredients

  • Protein such as chicken, pork, egg (scrambled or fried), seafood (recommend salmon, shrimp) etc

  • Vegetables such as mushrooms, onions, broccoli, carrots etc

  • Rice (leftover rice is good to use)

  • Garlic (depends on how garlicky you want your fried rice to be, but to be honest, be ready to be disappointed by the flavour of UK garlic...)

Seasonings (adjust according to personal taste)

  • Light soy sauce

  • Salt

  • Sesame Oil

  • White pepper

  • Other options : Korean Red Pepper Paste (for a sweeter flavour; goes well with chopped kimchi if you happen to have any) *If using kimchi, stir fry garlic and kimchi first, then add remaining protein and vegetables.

Instructions

  1. Prepare chosen protein and vegetables. Slice into small chunks. Set aside. Prepare rice if you haven't already (rice cooker is a must have!)

  2. Start Cooking. Heat up pan and drizzle some oil. Add garlic, stir-fry until fragrant. Add protein and vegetables. Stir fry for a few minutes. Add pre-cooked rice. Mix and add in seasonings.

  3. Turn off heat and serve!

I made fried rice with scrambled eggs, mushrooms and salmon, garnished with some crunchy fried shallots. What is your version of fried rice like?
