Salads

Sometimes, we might not feel that hungry or we just want something light to eat. Salads are perfect! Some tomatoes, cucumbers, carrots, nuts, protein (I usually opt for chicken or fish) and a nice drizzle of sauce tossed with some salad leafs will be your next healthy salad meal!

There is no fast and hard rule about what to add to your salad, but I recommend a few ingredients to make a good salad. Personally, I do not like fatty, creamy sauces like many would fancy, so my salad recipes are usually simple and clean to the palate.

Recipe (the portion for each ingredient differs according to personal taste)

Ingredients

  • Carrot (sliced, shredded etc)

  • Cucumber (sliced)

  • Cherry tomatoes (halved)

  • Salad leaves (pick any salad bag from the supermarket)

  • Fruit (if you fancy them in your salad, would recommend apples or grapes)

  • Nuts (pine nuts, cashew nuts etc)

Protein Options

  1. Fish (would recommend sea bass, salmon, and trout - a simple pan-fry with salt and pepper would suffice)

  2. Chicken

    • I would usually make chicken teriyaki.

    • You could get a pre-made teriyaki sauce or make your own using garlic, light soy-sauce, sugar/honey.

    • Method : First, heat up a pan and drizzle some oil. Add diced/sliced chicken thighs and pan-fry on low heat. Add teriyaki sauce and let it simmer (take note not to put on high heat or your teriyaki sauce will be splashing everywhere). Reduce the sauce to half and you'll know your chicken teriyaki is ready when it is nicely charred. Remove from pan.

Dressing options

  1. Either use the remaining teriyaki sauce from the pan to drizzle over your salad....

  2. Or Kewpie Roasted Sesame Dressing. (A personal favourite of mine, light and non-greasy Japanese salad dressing)

Here are a few examples of salads I have made.

(a) Salad with pan-fried salmon and Kewpie dressing.

(b) Salad with chicken teriyaki

(c) Salad with pan-fried sea bass with Kewpie dressing.
