Comfort Food Series (2) : Mee sua soup

'Mee sua' 面线, also known as Chinese wheat vermicelli is one of my favourite noodles. Really tasty with some clear broth, served with well-seasoned meatballs and vegetables! These noodles absorb soups/broths very easily, so be sure to have lots of soup (or your noodles may dry out).


Recipe

Ingredients

  • Mee sua (you could use other noodles, like rice vermicelli which is also a good option)

  • 100g of minced pork

  • Green leafy vegetables of your choosing (example : bak choy, choy sum, or just spinach if you can't find any Chinese vegetables)

  • Water/Stock

  • (Optional) Fried Shallots, Fried Egg

Minced pork marinade

  • 1 teaspoon of oyster sauce

  • 1 teaspoon of light soy-sauce

  • A pinch of white pepper

  • A drizzle of sesame oil

Instructions

  1. Marinate minced pork. Mix pork and marinate evenly, roll into small balls. Set aside.

  2. Cook mee sua in a boiling pot of water. Set aside when cooked.

  3. Cook remaining ingredients. In a separate pot (note that the pot of water cooked with mee sua is now starchy), boil water/stock. Cook meatballs. When meatballs are cooked, cook vegetables (usually takes less than a minute).

  4. Assemble mee sua, meatballs, vegetables and broth in a bowl. Serve hot, garnish with fried shallots (optional).

Make yourself a fried egg on the side (highly recommended) and there you have it, mee sua soup!

The key of the dish is the meatballs, you want them to be nicely marinated, full of flavour :)
