Comfort Food Series (3) : Paella

You'll find lots of of authentic Spanish paella recipes on the Internet, but I'm going to give you a fail-proof paella recipe for a one-pot weekend dinner at home! 3 key seasonings : paprika, parsley and lemon!


Recipe

Ingredients

  • Protein, would recommend...

    • seafood (like shrimp, salmon etc)

    • chicken (go for chicken thighs),

    • sausages (I bought mine from Borough market, packed with various distinct flavours ranging from veal, venison etc)

    • chorizo (in my opinion, they aren't really flavourful and don't add much to the dish)

  • Vegetables, would recommend...

    • Bell peppers (red, yellow, orange; adds nice vibrant colours to your dish)

    • Tomatos

    • Broccoli

    • Mushrooms

      • Spanish paella rice


      • Water/Stock

Seasonings

  • 2 teaspoons of paprika

  • 2 cloves of garlic

  • Parsley

  • Lemon Juice

  • Salt

  • Black pepper

Instructions

  1. Prepare vegetables. Cut vegetables into slices. Mince garlic. Set aside.

  2. Prepare protein. (if using sausages, remove casing for more flavour)

  3. Start Cooking!

    1. Heat up a pan and drizzle some oil.

    2. Firstly, cook protein, season with paprika, salt and pepper (for chicken and seafood, not sausages) remove from pan when cooked.

    3. Add garlic and vegetables. Stir-fry for a few minutes, season with paprika, salt and pepper.

    4. Add paella rice and water/stock (make sure water/stock covers the rice).

    5. Your dish is done when the rice is cooked, usually takes 25-30 minutes. Add cooked protein back into the pan and give a good stir..

  4. Remove from pan. Garnish dish with fresh chopped parsley and squeeze some lemon juice over it!

(a) Paella with sausages, tomatoes, bell peppers and mushrooms.

(b) Paella with chorizo, chicken, mushrooms, tomatoes and broccoli.
