Winter Series (2) : Corn and Carrot Soup

Another easy soup recipe with just 3 ingredients : sweet corn, carrot and pork ribs. Just put everything into a slow cooker and there you have it - soup that is full of natural sweetness and flavour!


Recipe

Ingredients

  • 1 cob of sweet corn

  • 1 carrot

  • 200g of pork ribs

  • Salt to taste

  • Water

Instructions

  1. Cut pork ribs and rinse under water. Blanch pork ribs for a few minutes to remove impurities. Add pork ribs into slow cooker.

  2. Cut carrot into large chunks. Add carrot into slow cooker.

  3. Rinse sweet corn and cut cob into half or more (if you have a strong knife, if not, can just place the corn cob as whole into slow cooker). Add sweet corn cob into slow cooker.

  4. Add boiling water to slow cooker and leave it on on high heat for 3-4 hours or 5-6 hours on low heat. You will know when the soup is done when the meat is tender (not tough).

  5. Add salt to adjust taste.

  6. Remove soup from slow cooker and serve with rice on the side. (you could eat the corn on the cob or slice the corn into little bits - like shown in the video - much easier to eat in my opinion)


On the side, I made something extra - scrambled egg with spring onions. Beat an egg, add some salt, pepper, soy sauce and sesame oil into egg mixture. Then heat up a mini-egg pan and drizzle some oil, add egg mixture and toss in some spring onions. Flip over and there you have it! An extra side dish~
