Winter Series (1) : Radish Soup

In a blink of an eye, autumn and winter will be here soon. Let's face it, summer in the UK doesn't really last long, so cherish the hot blazing sunshine when you can.


Winter is cold, sometimes the heating in the flat sucks and what you need is a hot bowl of soup to warm your body up. I'm going to list a few easy Chinese soup recipes that will do the job! Once again, I recommend getting a slow cooker to prepare soups *it is super convenient, alternatively could boil your soup in a pot.


Recipe : Radish and Beef Soup

Ingredients

  • 200g White Radish

  • 300g Beef ribs

  • White Pepper/Black Pepper

  • Salt

  • Water

  • Spring Onion (for garnish)

Instructions

  1. Cut beef ribs and rinse under water. Blanch beef ribs for a few minutes to remove impurities. Add beef ribs into slow cooker.

  2. Cut white radish into large chunks. Add white radish into slow cooker.

  3. Add white pepper and boiling water to slow cooker and leave it on on high heat for 3-4 hours or 5-6 hours on low heat. You will know when the soup is done when the meat is tender (not tough).

  4. Add salt to adjust taste.

  5. Remove soup from slow cooker and serve with chopped spring onion as garnish.

If you happen to have some dried scallops (2-3 pieces should suffice) brought from home, soak them for a few hours and add both soften scallops and water into the soup for deeper unami flavour*


You can serve the soup with rice on the side, or blanch some rice noodles topped with a fried egg!




You can replace the beef ribs with pork ribs, chicken drumsticks or thighs on the bone.
