Cooking in Lockdown Series (4) : Steamed Egg

An easy egg side dish, do not underestimate how full 1 egg can make you feel!


Remember (a) : 1 egg = 1 portion, 2 egg = 2 portions.

Remember (b) : 1:1.5 egg to water ratio (for a smooth, silky texture)


Recipe


Ingredients

  • 2 eggs

  • Lukewarm water (remember 1:1.5 egg to water ratio)

  • Salt

  • Soy Sauce

  • Sesame Oil

  • Dried Shallots (for garnish)

  • Spring Onions (for garnish)

Instructions

  1. Beat 2 eggs in a bowl. Add appropriate amount of water and salt. Mix well. Get rid of air bubbles on top of egg mixture.

  2. Steam eggs in bamboo steamer for 8-10 minutes under low heat. Steamed egg should be jiggly but firm when cooked.

  3. Remove from steamer. Serve hot, drizzle with soy sauce, sesame oil and garnish with dried shallots and spring onions.



There you have it, smooth steamed egg ready to serve as a side dish (especially when you feel like having one fried egg isn't enough to fill your belly)!
